Ethiopia is one of the developing countries with a high prevalence micronutrient deficiencies and protein-energy malnutrition. Vitamin A most versatile vitamins roles in various functions such as vision, immune defense, maintenance body linings skin. Fortifying cereals through processing conventional breeding can tackle deficiency. Orange Fleshed Sweet Potato (OFSP) source food that contains useful β-carotene, starch, mineral, dietary fiber, vitamins. The inclusion OFSP enhances beta-carotene content bread.
